Everyone loves an ice cream sandwich. They’re so much fun to eat and making homemade ice cream sandwiches makes them that much more delicious!

Large store bought cookies are bursting with vanilla ice cream and rolled in your favorite toppings.

Mini chocolate chips, shredded coconut, assorted sprinkles and even chopped nuts are all possibilities for coating the outside of your ice cream sandwich.

You can even combine toppings such as mini chocolate chips, shredded coconut and chopped almonds for an almond joy flavor combination!

Prefer a small ice cream sandwich? Feel free to use smaller cookies.

You will also be able to assemble more mini sandwiches, maybe even double the amount that the larger cookies make, with the amount of ice cream in the recipe.

I used store bought cookies from my grocery store bakery because using premade cookies makes it so easy to assemble these ice cream sandwiches without having to turn on your oven and bake cookies.
