Got a cravin' for a beefy, cheesy dish? Then look no further! This robust entree will quickly become a weeknight favorite at your house.

What You'll Need

  • 8 ounces uncooked small elbow macaroni
  • 1 pound ground beef
  • 1 onion, chopped
  • 2 (14-1/2-ounce) cans Italian stewed tomatoes, undrained
  • 1/4 cup ketchup
  • 1/2 teaspoon ground red pepper
  • 1/2 teaspoon salt
  • 1 cup (4 ounces) shredded Cheddar cheese

What to Do

  1. Cook elbow macaroni according to package directions; drain.
  2. Cook ground beef and onion in a Dutch oven coated with cooking spray over medium-high heat until ground beef crumbles and is no longer pink. Drain well; pat with paper towels.
  3. Stir stewed tomatoes and next 3 ingredients into skillet; cook until thoroughly heated. Stir in cooked macaroni. Sprinkle with shredded Cheddar cheese, and serve immediately.

Made this for dinner tonight. Better then I thought it would be. Quick and easy to prepare. I only used one can of stewed tomatoes and had to add an extra squirt of ketchup. This meal would be good after my husband and his cousin come in from deer hunting. Serve with bread and a salad.

My Grammy used to make this, or something very similar, when we were kids quite often as it was cheap, easy and quick for a farm-family supper. She used home-grown canned tomatoes that were chopped up a bit and cooked down some together with the macaroni on one pot while she cooked hamburger or left-over roast, even a little ham sometimes in a big cast iron skillet, then stirred it all together in a big bowl and served piping hot. She always called it goulash and I don't recall it ever having cheese, but just writing this makes me hungry for one of her goulash suppers!!

I used the Rotel Mexican blend tomatoes with chiles and added chili powder, too. I thought it was pretty good. I adjust the red pepper flakes to our tastes.

A good basic recipe-always good! I added sauteed green pepper and garlic as well as onion. Also a pinch of red pepper flakes. It's hard to go wrong here!

Isn't this, with a few minor changes, (such as tomato sauce of choice instead of canned tomatoes), the old standby that was called American Chop Sui?? There are many family versions of this fish, but one constant remains... It is delicious and a great family meal for a great price!!! I use Bertoli sauce, and finish the dish with a generous helping of parmigiana cheese!!

I haven't heard this word in years either. I would use one can each of reg. stewed tomatoes and one re-tel and add some black beans.

I haven't heard the word "Slumgullion" since the 70's when i lived in Colorado. My then stepmother made it for us kids. I still it eat to this day.

I have not heard about slumgullion (spelling)? in years. My Mom made a variation of this every so often. We kids weren't so crazy about it then. My Dad always called it "good peasant food" It sounds wonderful now! Kids can be so picky.

Our family calls this "Slumgullion". You can use whatever macaroni product you have on hand, and whatever tomatoes and cheese. We usually cook a little celery along with the onion. You can add Italian spices or do the Tex-Mes Ro-tel and change the cheese to match the cuisine. If you want to keep it American, just omit the cayenne pepper and use either colby, cheddar or Velveeta to melt in.

I've been making a variation of this for years. Instead of adding ketchup and Italian stewed tomatoes, I add RoTel tomatoes and green chilis; and toss with cubed cheddar rather than shredded cheddar.
